One of the most important aspects to Indian culture is of course food!! No occasion, wedding, event, ritual or festival is ever complete without a decadent display of food. So today I am sharing another one of my favourite recipes – this time a sweet dish Carrot Halwa (pudding)! INGREDIENTS

  • 4 cups grated carrot
  • 4 cups full cream milk
  • 2 tbsp ghee (optional)
  • 3-4 tbsp raw sugar (adjust for own desired taste)
  • 1/2 tsp cardamom powder
  • Sliced almonds (garnish)

DIRECTIONS

  • Peel + grate 4 cups of carrots (5-6 large carrots).
  • In a heavy pot, add grated carrots along with 4 cups of milk. You can use dairy free milk if you wish – the quantity may need adjusting.
  • Slowly bring the mixture to a boil and then cook on a low heat. You will need to continue to stir to avoid burning on the bottom.
  • Cook till milk is reduced to about 75%. Mix in ghee, sugar & cardamom powder.
  • Continue to stir until carrots have absorbed all milk and mixture thickens like a pudding. If carrots still look solid/ uncooked, add more milk & continue to simmer.
  • Simmer until milk evaporated and mixture is fairly dry. You will see some milk solids in the halwa.
  • Garnish with sliced almonds & enjoy!
